Not every bottle of bubbles needs to be a special occasion splurge — but it should still be worth opening. At Off Premise in Lincoln Park, we stock sparkling wines that earn their place on the shelf: grower Champagne, serious Cava, honest Prosecco, and a few things you probably haven't tried yet. Here are four bottles we'd actually recommend right now, across a range of budgets.
If you're ready to understand why grower Champagne changed the conversation, start here. Robert Moncuit is a small, family-owned estate in Le Mesnil-sur-Oger — one of the most prized Grand Cru villages in the entire Champagne region. This is 100% Chardonnay from vines the family actually farms, not fruit purchased on the open market. The result is electric: chalk-driven, tightly wound, with citrus and green apple cutting through a long mineral finish. The Extra Brut dosage keeps things precise, not austere. At $82, you're getting a bottle that punches well above its price point against anything from a major Champagne house. Drink it with oysters, raw fish, or just an empty Tuesday evening.
Bruno Paillard is the newest house in Champagne — founded in 1981 — and it's always operated with a level of transparency most houses ignore. Every bottle is back-labeled with the disgorgement date, which tells you exactly how fresh the wine is. The Première Cuvée is a multi-vintage blend that uses a significant proportion of reserve wines, giving it texture and depth alongside the house's signature fresh acidity. Extra Brut means minimal added sugar, so what you're tasting is the wine itself. Toasty, layered, and genuinely complex. This is the ceiling of our under-$100 range — and it holds up.
Raventós i Blanc left the Cava DO over a decade ago because they believed their terroir in Conca del Riu Anoia deserved a stricter standard than the appellation required. "De Nit" — meaning "at night," a reference to nighttime harvesting to preserve freshness — is their rosado, made from Monastrell, Xarel·lo Vermell, and Parellada. It's delicate salmon-pink, dry, and structured with red berry, citrus peel, and a savory mineral thread running through it. This is serious sparkling wine from a producer doing things the hard way because they believe in it. At $30, it's one of the better values in the shop, full stop.
The short version: ignore the marketing, pay attention to who made it and where. Grower Champagne over big-house Champagne at the same price. Raventós over generic Cava. Venturini Baldini over anything labeled "semi-secco" from a brand you've seen at a gas station.
