Cinco Sentidos Mezcal: The Producer Story Behind One of Oaxaca's Most Uncompromising Spirits

There are mezcal brands, and then there are mezcal documentarians. Cinco Sentidos falls firmly in the second category. Founded by Oaxacan native Aquilino García López, Cinco Sentidos — "five senses" in Spanish — exists for one reason: to capture wild, traditional mezcal production exactly as it happens, without interference, without shortcuts, and without compromise.

Aquilino spent years working closely with small-scale, rural palenqueros across Oaxaca before launching Cinco Sentidos as a vehicle to bring their work to a wider audience. The model is unusual. Rather than building a distillery or establishing a house style, Aquilino functions more like a scout and steward — identifying maestros producing genuinely exceptional mezcal using methods that predate the modern industry, then bottling their work under the Cinco Sentidos label with full transparency about who made it, where, and how.

The Mixteca Region and Why It Matters

The three bottles we carry at Off Premise come from La Colección Mixteca Edition 4 — and the Mixteca Alta region of Oaxaca is worth understanding before you pop a cork. This high-altitude, rugged part of the state sits far from the tourist trail and the well-worn mezcal villages like Santiago Matatlán. The Mixtec people have been cultivating and distilling agave here for centuries using techniques largely unchanged by outside influence. The terroir is dramatic: volcanic soils, extreme elevation, dramatic temperature swings. The agaves grown here — including rarer, slower-maturing varieties — reflect all of it.

Edition 4 of the Mixteca collection presents three distinct expressions, each a snapshot of a different agave variety or combination harvested from this region. Pizorra is a rare wild agave that translates to "slate" — a nod to the rocky, mineral-rich soils it grows in. Azul refers to the wild Mixteca expression of the agave most people know as blue weber, though here it's a far cry from anything tequila has taught you. Azul y Papalomé combines that wild Azul with Papalomé, a robust and smoky agave variety that shows up in only a handful of serious collections. Each bottle is $160 — not an impulse buy, but absolutely worth it.

How It's Made

Production across these expressions follows traditional Mixteca practice: agave hearts are roasted in earthen pit ovens, crushed with a tahona or wooden mallets, fermented outdoors in open-air wooden vats using wild ambient yeast, and distilled in clay or copper pot stills — depending on the maestro. Nothing is rushed. Fermentation can run for days or weeks depending on ambient temperature and the whims of the microflora doing the work. Yields are tiny. What ends up in the bottle is the result of years of agave growth — some wild agaves in this collection matured for 12 to 20 years before harvest — compressed into 750ml of something genuinely irreplaceable.

Why Off Premise Carries Cinco Sentidos

We don't stock mezcal to fill shelf space. We stock mezcal because we believe it's one of the most complex, terroir-driven spirit categories on earth — and Cinco Sentidos is one of the clearest expressions of why. Aquilino's transparency about production, his relationships with the maestros, and his refusal to homogenize the spirits for mass appeal make this one of the most honest labels in the category. When Adam tasted through the Mixteca collection, the decision was easy. These bottles tell a story that no marketing copy could manufacture.

If you're already a mezcal drinker, La Colección Mixteca Edition 4 is the kind of release you buy, sit with, and return to. If you're new to serious mezcal, this is the deep end — but it's the right place to jump in.
