De Matachines: The Oaxacan Producer Redefining What Agave Spirits Can Be

There are producers who make mezcal, and then there are producers who document a place. De Matachines falls firmly in the second category. Based in the Sierra Juárez region of Oaxaca, this small operation is the work of maestro mezcalero Fortino Ramos and his family, working in a mountainous zone where the altitude, soil, and climate create conditions you simply cannot replicate anywhere else. The spirits they produce aren't trying to meet a market expectation. They're a direct transmission of a specific landscape and a generational craft.

Where It Comes From

The Sierra Juárez sits at elevations pushing past 6,000 feet in parts — dramatic, cold, biodiverse terrain that forces agave to grow slowly and concentrate flavor in ways that lowland plants just don't. The agaves Ramos works with are largely wild-harvested or semi-cultivated, meaning years — sometimes decades — of growth before a single liter of spirit is made. That scarcity isn't marketing. It shapes everything about how the liquid tastes and why each bottling is genuinely unrepeatable.

The Production Approach

Ramos works in a traditional palenque using wood-fired pit roasting, stone tahona milling, open-air fermentation in wooden vessels, and small copper pot stills. There's no industrial shortcut in the process. Fermentation runs long, allowing wild yeast populations from the local environment to contribute to the flavor profile. The result is spirits with real texture, complexity, and a sense of geography that you can actually taste — not just read about on a back label.

What distinguishes De Matachines beyond the mechanics is the intentionality. Ramos isn't chasing smokiness or spectacle. The productions are precise, considered, and expressive of the agave first. Every botanical and microbial variable in that mountain air is invited into the process rather than controlled out of it.

What We Carry at Off Premise

The De Matachines Peñasco ($165) is one of the more striking expressions of a lesser-known agave variety we've brought into the shop. Peñasco grows at high elevation, produces relatively little juice, and delivers a spirit that's both mineral and wildly aromatic — stone fruit, dried herbs, a long savory finish. It's a bottle that rewards patience and attention.

The De Matachines Lamparillo Agave Spirits ($145) showcases a rare agave that's almost never seen outside of Oaxaca's more remote corners. Lamparillo has a distinct waxy, resinous quality that gives the spirit unusual depth. The category designation "agave spirits" rather than mezcal is a function of regulations, not quality — this is a serious, singular bottle.

The De Matachines Ensamble Verde Cenzio ($125) is our entry point into the lineup and arguably the most immediately expressive. The ensamble brings together complementary agaves in a way that creates something more dynamic than either would produce alone — bright, green, and herbal up front with real structure underneath.

Why We Carry De Matachines

Off Premise exists to put genuinely important bottles in front of people who care. De Matachines represents exactly the kind of production we built this shop around — small-scale, regionally specific, made by a family with deep roots in their craft and zero incentive to cut corners. These aren't bottles you stumble across. We carry them because Adam tasted through the lineup and couldn't point to a single thing that felt compromised. That's rarer than it should be.

If you're already exploring agave spirits, this is a producer worth knowing. If you're newer to the category and want to understand what all the conversation is about, the Ensamble Verde Cenzio is a legitimate place to start.
