Manuscrito Tequila: The Producer Story Behind One of Our Favorite Bottles

There are tequila brands, and then there are tequila projects. Manuscrito falls firmly in the second category — and that distinction matters more than you might think.

Manuscrito is made at Destilería Cascahuín in the Lowlands of Jalisco, near the town of El Arenal. If that name sounds familiar, it should. Cascahuín is one of the most respected traditional distilleries operating in the Tequila denomination today — a family-run operation that has been producing agave spirits since 1904. Four generations deep, the Orozco family has never chased trends. They still cook agave in brick hornos, ferment in open-air wooden vats, and distill in small copper pot stills. This is not a talking point. It's the actual reason the spirit tastes the way it does.

What Manuscrito does is channel that production into something intentional and focused. The name itself — "manuscript" — is a nod to the idea that each batch is a document, a record of a specific moment in time and place. These are not blended-to-consistency products engineered to taste the same year after year. They're expressions of how that agave grew, how that fermentation ran, what that particular cook produced.

Cascahuín's Lowlands terroir gives Manuscrito a flavor profile that's distinctly different from the Highland tequilas that dominate the market. Expect earthier, more herbaceous character — cooked agave that reads roasted and vegetal, with a brightness that comes from proper fermentation rather than from additives.

The Bottles We Carry

We stock three expressions at Off Premise, and each one tells a slightly different part of the story.

The Manuscrito Blanco ($52) is the clearest window into what Cascahuín does well. Unaged, bottled at standard proof, it lets the cooked agave and natural fermentation character speak without interference. This is a sipping blanco — not a mixer, though it'll make an exceptional Margarita if you insist.

The Manuscrito High Proof Blanco ($70) is where things get genuinely exciting. Higher proof amplifies everything — the texture, the agave intensity, the finish. If you want to understand what Lowlands tequila is actually capable of, this is the bottle. Adam keeps coming back to this one specifically because it shows how much complexity a well-made blanco can carry without any wood to lean on.

The Manuscrito Reposado Chapter III ($60) brings a short rest in oak into the equation without letting the wood take over. "Chapter III" signals what this project is about: an ongoing story, told in installments. The reposado adds a soft warmth and some rounding without burying the agave underneath vanilla and caramel. It's a reposado for people who actually like tequila.

Why We Carry Manuscrito

We're selective about what we bring into Off Premise — especially in a category as crowded and as frequently misleading as tequila. Too many bottles at this price point are selling a story that the liquid doesn't back up. Manuscrito backs it up. The production is verifiable, the source distillery is exceptional, and the bottles drink at a level that justifies every dollar.

This is the kind of tequila that converts people who think they don't like tequila — because what they actually don't like is the commodity stuff that's dominated the category for decades. Manuscrito is something different.
