Raison Personnelle 15 Year Wood Fired Cognac: 178 Bottles Left in Existence

Some bottles land on the shelf and you know immediately they're different. Raison Personnelle 15 Year Wood Fired is one of those. This is Grande Champagne Cognac — the most prized terroir in the appellation — distilled over open wood fire in traditional Charentais pot stills and aged between 15 and 19 years. Total production: 489 bottles worldwide. Bottles remaining in existence: 178. We have some of them at 1128 W Armitage Ave, and that number is not going up.

Why Wood-Fired Distillation Changes Everything

Modern Cognac production relies on steam coils to heat the still — consistent, controllable, efficient. Wood-fired distillation, conducted over open flame, is nearly extinct for a reason: it demands constant human attention and leaves no margin for error. But what it gives back is texture and depth that steam simply cannot replicate. The distiller is coaxing the spirit rather than running a process. You taste the difference.

Pair that method with Grande Champagne fruit — chalk-rich soils, slow-ripening Ugni Blanc, eaux-de-vie built for long aging — and you have the structural foundation this spirit needs to go the distance in barrel. Limousin oak did the rest over a decade and a half, integrating everything without flattening it.

489 bottles produced. 178 remain. Wood-fired distillation in Grande Champagne Cognac is not a marketing angle — it's a nearly lost craft, and this release is direct evidence of what it produces.

What It Tastes Like

The nose opens with honeysuckle, vanilla-soaked oak, and hazelnut — inviting and classical — then shifts toward raisin and a quiet leather note as it opens up in the glass. Give it five minutes. It earns that patience.

On the palate, hazelnut and white stone fruit lead, followed by baking spice and a finish that carries leather and oak without any heat. The balance here is the story. Nothing overreaches. Everything stays in its lane and the whole is better for it. Medium amber, gilded with copper, tells you exactly how long this has been sitting in wood. The palate confirms maturity without belaboring the point.

Who Should Buy This

If you already love aged Armagnac or high-end single malt Scotch and you're looking for something that operates at that same level of craft and specificity, this is your bottle. If you've never found a Cognac that moved you, wood-fired Grande Champagne at 15-plus years is where you start rethinking that position. And if you simply collect spirits that represent a method or a moment in time — 178 bottles left is a hard number to argue with.

The Pairing

Pour it in a tulip glass after dinner alongside a wedge of aged Comté — the nutty, crystalline quality of the cheese mirrors the hazelnut and oak in the spirit in a way that's almost unfair. Dark chocolate works equally well. Or light a cigar and leave the food out of it entirely. This is a slow-evening bottle. Treat it accordingly.
