Alambique Serrano is a rum brand from Oaxaca, Mexico — which already tells you it's going to be unusual, because Oaxaca is famous for mezcal, not rum. The Krassel family has been distilling aguardiente from sugarcane in the mountains above Santa Maria Tlalixtac for three generations, long before anyone outside their village had ever heard of them.

Why Oaxacan Rum is Different

The sugarcane they use is grown at altitudes up to 4,000 feet on steep hillsides — conditions that stress the plant and concentrate its flavors in ways that lowland Caribbean cane simply doesn't produce. The cane is harvested by hand and transported by mule to the distillery the same day, where it's milled and fermented with ambient yeast for up to ten days.

What makes Alambique Serrano truly distinct is the still. Rommel Krassel distills in copper alembic stills — the same rustic pot still design used for mezcal production in the Oaxacan valleys. This technique produces heavier, more aromatic distillate than the column stills used for most Caribbean rum. You taste the terroir in a way that's almost more reminiscent of a good mezcal or agricole rhum than anything from Jamaica or Barbados.

The Single Cask Program
