Tacos don't need a pairing guide — until you've had a great one. Then you realize the right bottle doesn't just wash down the food, it pulls out flavors you didn't know were there. Here's what we'd reach for, and why.
Cascahuin is a Jalisco distillery doing things the right way — small production, tahona-milled agave, direct-fired copper pot stills. The blanco comes out clean and bright with a saline minerality and a citrus kick that makes it almost custom-built for anything coming out of the ocean. Fish tacos with a squeeze of lime and a hit of crema? This bottle amplifies every single element on that plate. Sip it neat between bites. Don't muddy it with ice.
Cascahuin Tequila Blanco — $55. One of the most honest blancos at this price point. The minerality alone is worth the buy-in.
When the taco has weight — charred beef, slow-braised barbacoa, rich consommé on the side — you want a spirit that can hold its ground. Siembra Valles Reposado spends time in oak without losing its agave character. You get cooked agave sweetness, a little vanilla, some dried fruit, and enough structure to stand up to smoky, fatty meats. This is the pairing where people stop mid-bite and say something. It earns its $90 price tag in moments like that.
Siembra Valles Tequila Reposado — $90. A serious bottle for serious tacos. The oak integration here is exceptionally well-balanced.
This one isn't about during — it's about after. You've had four tacos, maybe five. A shot of Fernet Branca is the move. The bitter herbal profile cuts through richness, settles the stomach, and resets your palate. Italians have been doing this for a reason. It's also a genuinely great pairing with al pastor — the anise and mint notes in the Fernet play off the pineapple and chile marinade in a way that feels intentional even when it's spontaneous.
Fernet Branca — $45. The digestif that works before, during, and after. Keep a bottle in the house and thank yourself later.
Fish tacos → Cascahuin Blanco. Carne asada or barbacoa → Siembra Valles Reposado. Everything else → pour a Fernet and let it sort itself out. These aren't theoretical pairings — they're bottles we've tasted, thought about, and stocked because they earn a place on the shelf.
All three are on the shelf right now at Off Premise, 1128 W Armitage Ave in Lincoln Park. Not in the neighborhood? No excuse to drink the wrong thing with tacos.
