Off Premise is honored to host Eduardo "Lalo" Pérez Cortés — the young Oaxacan mezcalero behind some of Cinco Sentidos' most quietly extraordinary releases — for an intimate evening of tasting, conversation, and Q&A.
Lalo will be joined by his translator and the team from Cinco Sentidos, walking us through his distillates and the seasonal philosophy that shapes everything he makes at his family palenque in Miahuatlán, Oaxaca.
Every ticket includes a 750ml bottle of a mezcal that exists nowhere else. Distilled in the days before Día de Muertos, 2025. Bottled January 2026, exclusively for Off Premise to commemorate Lalo's first visit to the U.S.
Lalo roasted ripe Espadín (A. angustifolia) for eight days in an underground conical oven over mesquite — a longer, deeper roast than the prior California batches. The cooked agave was hand-crushed with wooden mallets and machetes, dry-fermented for three days, then fermented an additional fifteen days with well water.
After a single distillation in a copper alembic — the resulting spirit known locally as xixe — Lalo added roughly 30 kilograms of peeled, deseeded mandarin oranges and cempasúchil, the marigold of the dead, to the boiling chamber for the second distillation.
The cempasúchil is what makes this batch different. The same flower that lines ofrendas across Oaxaca every November — earthy, floral, faintly herbaceous — distilled directly into the spirit alongside the citrus.
Lalo is a young mezcalero from Miahuatlán, Oaxaca, working at his family palenque under the guidance of his father, Eleuterio "Tío Tello" Pérez. His distillates — small, seasonal, never blended — have become some of the most sought-after expressions in the Cinco Sentidos lineup.
