Julien Cecillon farms organically in the steep terraced vineyards of Saint-Joseph, working schist and granite soils that define the region's mineral backbone. For Les Graviers, he pulls fruit from parcels that wouldn't qualify for AOC bottlings—often younger vines or sites just outside appellation boundaries—but the farming and winemaking remain identical to his appellation wines. Fermentation is natural, élevage is brief and gentle in older wood, and the wine sees minimal sulfur at bottling. The result is a snapshot of northern Rhône Syrah in its most transparent, unadorned form.
