*Off Premise Wine Club Pick* A rosé in January? Absolutely. Tavel rosés are built differently: more structured, fuller bodied, and perfect for lifting your spirits in the depths of winter. This is the only A.O.C. in France dedicated entirely to rosé, a distinction that dates back to 1936 when Guillaume Demoulin's great-grandfather purchased the eighteenth-century château. Even Louis XIV sang the praises of Tavel's legendary rosés, and today the appellation maintains its grand cru reputation. Guillaume and his wife Céline farm thirty-two hectares in the hills of Montagne Noire, where stony vineyards of sand and quartzite galets roulés (like those in Châteauneuf-du-Pape) produce grapes with tremendous concentration. The 2024 vintage blends 60% Grenache with Clairette, Syrah, Cinsault, Mourvèdre, and Bourboulenc. Grapes are picked at optimal ripeness and undergo cold maceration for 24 to 48 hours, followed by gentle pressing and temperature-controlled fermentation at 17°C for 20 days. Six months of aging in stainless steel vats brings fullness and complexity. The result is a stunning raspberry-pink wine with an expressive nose of red berries. The palate is balanced and generous, with fine tannins, bright acidity, and a long, tense finish. This is a rosé with shimmer and substance, elegant yet hearty enough to pair with bistro burgers, charcuterie boards, or anything you'd normally open a light red for.
