Guillaume Demoulin's great-grandfather purchased the eighteenth-century château in 1936, the same year Tavel earned its A.O.C. status and cemented its grand cru reputation among French rosés. The estate's vineyards sit in the southern Rhône, where the Mediterranean climate and the rocky, well-drained soils of Montagne Noire push the vines to produce fruit with depth and structure uncommon in rosé. After maceration and pressing, the wine ferments at a cool 17°C for twenty days in temperature-controlled tanks, then ages six months in stainless steel to preserve freshness while building body and complexity.
