This small batch of 40% wild-harvested Tobalá (Agave potatorum et Lecheguilla semaniana) and 40% cultivated Madrecuixe (Karwinskii) was produced by young mezcalero Eduardo 'Lalo' Pérez Cortez. To produce this batch, Lalo harvested the ripe agaves in his hometown of El Nanche, Oaxaca. Post-harvest, Lalo roasted the agaves in an underground conical oven with mesquite firewood for seven days. On the seventh day, Lalo unearthed the oven and — before mashing with large hammers made of mesquite — allowed the mash to dry-ferment for additional days with well water, then distilled the fermented mash in copper stills. Adjusted with heads, hearts and tails. Bottled exclusively for the Chicago market. 5 Sentidos ('Five Senses') originated as the house spirit of Oaxaca's acclaimed restaurant El Destilado — small-batch mezcal from mezcaleros who handcraft their work with rigor and respect. 49% ABV. 750ml.
