Dor splits maturation between dry and humid cellars, a dual-chai strategy that balances evaporation with slow oxidation to build both concentration and roundness. The base is Colombard, Folle Blanche, and Ugni Blanc, the traditional Cognac varietals, distilled and aged in the house's Jarnac cellars, which hold some of the oldest stocks in the appellation. A.E. Dor has operated in Jarnac since 1858, and the house positions this expression in its Tradition range, signaling classical methods and extended maturation rather than experimental cask programs. Fine Champagne is a Cognac AOC term, not a sparkling wine designation, denoting a blend sourced entirely from the chalky slopes of Grande and Petite Champagne, the heartland crus where vines struggle into concentrated fruit and distillate ages with uncommon grace. The chalky terroir imparts floral lift and mineral backbone, traits that deepen rather than fade across decades in oak.
