Cavalchina has been one of the benchmark estates of Bardolino since the Piona family took over the property in the early 1900s, and their vineyards along the southern shores of Lake Garda were officially recognized as among the finest in the region as far back as 1848. The estate farms sixteen hectares on the glacial moraines and alluvial soils that fan out from the lake's edge, a landscape shaped by ancient glacial activity and moderated by the thermal influence of one of Italy's largest bodies of water. The Bardolino is a blend of 60% Corvina, 30% Rondinella, and 10% Molinara, the classic trio of the eastern Garda, vinified in stainless steel with temperature control to preserve freshness, then kept on its lees until bottling in March. Bardolino is one of Italy's great underappreciated reds: light in body and delicate in color, it is often dismissed by those who mistake weight for quality. Cavalchina's version makes the case for the appellation with quiet confidence. The nose is bright and inviting, with cherry, wild cherry, and a floral lift that is characteristic of Corvina at its most expressive. On the palate the wine is fresh, lively, and dry, with juicy red fruit, a thread of anise, and the persistent peppery, spicy finish that is the hallmark of well-grown Bardolino. Tannins are fine and barely noticeable, and the acidity keeps everything clean and food-friendly. Serve it slightly cool, around 60 degrees, alongside grilled lake fish, risotto, fresh pasta, roast chicken, or a simple antipasto spread. It is the kind of wine that belongs on a table, not saved for a special occasion.
