A classic ensamble that mixes the refined flavors of cultivated agave Azul (a. Tequilana Weber) along with intense notes of wild agave Papalome (a. Potatorum), this batch was distilled by maestro mezcalero Delfino Tobón Mejía in his hometown of San Pablo Ameyaltepec, Puebla. To make this batch, Delfino roasted both species of agave in his brick-lined underground oven with mesquite and tlahuicole wood for three days. After the roast, he milled the cooked agaves with a mechanical shredder and allowed them to dry-ferment for approximately two days before adding spring water allowing the mash to ferment for an additional eight days. Once fermentation was complete, Delfino distilled the mash once in his hybrid, 3-plate copper alembic still. Proofed with heads, hearts and holanda by Delfino. Distilled in February 2023, bottled June 2024. 213 liters produced.
