Alberto Martinez makes mezcal the way his family has for generations in Santa Catarina Albarradas, and this bottling is a lesson in agave timelines as much as it is a drink. "Maestro y Aprendiz" pairs wild Arroqueño — an agave that can take fifteen to twenty-five years to mature, hence "maestro" — with cultivated Espadín, the quick-growing workhorse that's ready in under a decade and earns the "aprendiz" title. Blending the two in one batch is Martinez's way of putting patience and practicality in the same glass, and it's exactly the kind of producer-specific detail that Cinco Sentidos was built to spotlight. Founded by Jason Cox out of El Destilado in Oaxaca City and imported by PM Spirits, Cinco Sentidos doesn't operate like a typical label. Every bottle names the mezcalero, the village, the agave, and the still — Cox pays above market for each batch and runs a 10% profit-share back to the producers, whose names go on the label instead of his. "Drink With Respect" isn't a tagline here so much as the actual business model, and Martinez's bottle is a good example of why that matters: this is his process, his agave, his name on the front. At 98 proof, this is not a sipping mezcal for the faint of heart — expect big, round agave character up front, roasted and mineral from the Arroqueño, with the Espadín pushing through brighter green and peppery notes and a long, warming finish with a touch of smoke. It holds up in a cocktail (a mezcal Negroni or a spicy margarita variation) just as well as it does neat in a copita after dinner. Pair it with something fatty and charred — carnitas, grilled octopus, a smoky mole negro — anything that can stand up to the proof. We've got this one in rotation at Off Premise because it's a clear, honest expression of what makes Oaxacan mezcal worth seeking
