If Provençal rosé has a house style built on pale color, cold steel, and immediate consumption, Clos Cibonne is the argument against all three. The estate sits at Le Pradet, roughly 800 meters from the Mediterranean in the foothills of the Maures, in a bowl facing the sea above Toulon's harbor, and it is one of the eighteen Crus Classés of Côtes de Provence. The grape is Tibouren, indigenous to Provence and genetically identical to Liguria's Rossese. André Roux believed in it enough to tear out the estate's Mourvèdre and replace it entirely, and he was instrumental in getting Tibouren onto the official list of permitted varieties when the Côtes de Provence appellation was created in 1973. The estate later received special permission from the appellation to name the grape on its labels. Tradition runs 90% Tibouren with 10% Grenache from vines over thirty years old on clay-calcareous soil, farmed organically. Then comes the part nobody else does. After an early-morning hand harvest the grapes are destemmed, directly pressed, and fermented with native yeasts in stainless steel. The wine then goes into century-old 5,000-liter foudres dating to 1903, deliberately left unfilled so a veil of yeast, called fleurette locally, can form across the surface. It rests under that veil for up to a year, the same principle as flor in Jerez or sous voile in the Jura. What comes out is darker than modern Provençal rosé, closer to onion skin or pale copper, and it drinks like a wine rather than a refreshment. Wild strawberry and blood orange, dried herbs and orange peel, a savory almost briny undertow from the veil, and a textural grip that most rosé simply doesn't have. It has a reputation among French collectors for texture, substance, and the ability to age gracefully for a decade or more, which is nearly unheard of in the category. Serve it cool but not cold, around 12°C, in a proper glass. It handles grilled fish, roast chicken, charcuterie, and anything with garlic and olive oil, and it will still be interesting on the second day.
