Domaine Cazes runs one of the largest biodynamic estates in France, farming over 400 acres of vines in Roussillon near the Spanish border. Since converting to biodynamic viticulture in 1997, they've become a benchmark for what serious organic farming looks like at scale in the warm Mediterranean climate of southern France. This Macabeu orange wine shows exactly how that scale translates into experimentation and craft—taking a grape best known for its role in Cava and Rioja Blanco and vinifying it with extended skin contact instead of treating it as a conventional white. Macabeu grown on the clay-limestone soils of Roussillon already has weight and body, but seven to fifteen days of skin maceration pulls color, tannin, and phenolic grip from the skins the same way red wine extraction does. What you end up with is a deep amber-gold wine that drinks nothing like the neutral, fizzy base wines Macabeu usually becomes. Instead, this is full-bodied, structured, tannic—closer in texture to a light red than a white, with the kind of chew and presence that changes how you think about pairing. On the nose, expect bergamot, tea leaf, and dried orange peel layered with curry spice and clove. The palate follows through with bitter orange, kumquat, and a savory dried-fruit character that edges toward buttered popcorn on the finish. There's real grip here, a gentle bitterness that cleans the palate rather than cloying, and enough acidity to keep things lifted despite the wine's 14% alcohol. It's a natural fit for bold, spice-driven food—Thai curries, Sichuan dry-fried green beans, Korean fried chicken, even Moroccan tagines. The tannin and structure also let it stand up to grilled fish with charred skin, smoked trout, or roasted cauliflower with tahini.
