Olga Raffault has been one of Chinon's benchmark producers for decades, the kind of estate other winemakers point to when they talk about what Cabernet Franc is supposed to taste like on the Loire's sandy, river-adjacent soils. "La Fraîch'" is their answer to the question of what to drink on a Tuesday: 100% Cabernet Franc from young vines planted on flat, sandy parcels near the winery, just off the Vienne River. The name translates roughly to "the cool one," and that's exactly the idea—this is built to be served with a slight chill, not cellared. The approach here is deliberately hands-off. Grapes are certified organic, picked by hand, and the wine sees nothing but stainless steel, so there's no oak to soften or distract from the fruit. What you get is bright, unfiltered Cabernet Franc character: raspberry, red cherry, and red currant up front, with the crushed-herb note and light earthiness that's basically Chinon's signature. It's light-bodied with lively acidity and soft, unobtrusive tannins, finishing crisp and clean rather than long and brooding. This is not a wine asking to be analyzed. Think of it as the French answer to a gulpable red for warm weather, lightly chilled (45-55°F is the sweet spot) and poured generously. It's a natural match for charcuterie boards, roast chicken, grilled sausages, or a plate of cheese and olives on the porch. It also happens to be one of the more food-flexible reds we carry, light enough for fish dishes with some richness to them, but with enough fruit and herbal snap to stand up to red meat off the grill.
