Fernet-Branca is Milan's most recognizable bitter liqueur, a bracingly herbal amaro built from 27 botanicals — including myrrh, rhubarb, chamomile, cardamom, and saffron — macerated according to a formula the Branca family has guarded since 1845. The intensity sets it apart: where many amari soften toward the sweet side, Fernet-Branca leans medicinal, minty, and uncompromisingly bitter, a profile that has made it both a bartender's handshake and a cult digestif across Chicago's cocktail bars and home bars alike. The category name itself, fernet, now belongs to dozens of imitators, but the original remains this bottle from the Fratelli Branca distillery in the Porta Nuova district of Milan. The Branca family has operated the same distillery since the mid-19th century, steeping their botanicals in grape-based neutral spirit and aging the maceration in oak barrels for a minimum of twelve months before bottling at 39% ABV. The exact formula remains a closely held secret, known to only a handful of family members at any given time, but the components are sourced globally: Iranian saffron, Sri Lankan cardamom, South African aloe, French gentian root. The production method has changed little in nearly two centuries — the maceration is long, the botanical load is high, and the resulting liquid is filtered minimally, preserving its dark, near-black color and oily, resinous texture. Unlike lighter amari, Fernet-Branca does not rely on sugar for balance; the bitterness is structural, not decorative. The flavor opens with intense menthol and eucalyptus, followed by earthy myrrh, sweet rhubarb, and a saline minerality that comes from the high botanical concentration. The midpalate is medicinal, almost camphoraceous, with layers of chamomile, licorice root, and anise, and the finish is long, bitter, and faintly sweet from saffron's aromatic persistence. Serve it ice-cold as a digestif after a heavy meal — the bitterness aids digestion, which is why it has been a staple in Italian households for generations. It is equally at home in a Toronto cocktail with rye whiskey and simple syrup, or as a half-ounce float on a stirred Negroni to add complexity and lift.
