Green Chartreuse V.E.P. is what happens when the Carthusian monks of the Grande Chartreuse decide that regular Green Chartreuse — already a 130-plant secret recipe dating back to a 1605 manuscript — isn't quite finished yet. V.E.P. stands for Vieillissement Exceptionnellement Prolongé, "exceptionally prolonged aging," and that's exactly what sets this bottling apart: the monks set aside select batches of the base liqueur and let them rest for years longer in large old oak casks before bottling, a practice they've followed since 1963. The extra cask time doesn't change the recipe — that remains locked away, known only to two monks at a time — but it rounds and deepens the spirit, pulling the raw herbal intensity of standard Green Chartreuse into something softer, woodier, and more layered, with the same core of alpine botanicals, mint, and anise still very much present underneath. At 54% ABV and bottled at a full liter, this is a serious, high-proof sipping liqueur. Drink it neat in a small glass after dinner, or on a single large ice cube to let it slowly open up — the aromatics shift noticeably as it warms. It also has enough backbone to anchor a Last Word or Chartreuse Swizzle if you don't mind using an aged expression in a cocktail, though most people buy V.E.P. specifically to sip and study. It pairs naturally with dark chocolate, strong aged cheeses, or simply a quiet moment at the end of a meal — this isn't a liqueur built for crowds. The packaging nods to the brand's history as directly as the liquid does: the bottle is a faithful reproduction of the earliest known Chartreuse bottle, from 1840, and it ships in the monks' own wooden case.
