Henri Bourgeois didn't just ride the Sancerre wave — the family helped create it. Ten generations deep in Chavignol, the estate's modern reputation was built by Henri himself in the 1950s, when he championed serious, terroir-driven Sauvignon Blanc at a time when the appellation was still finding its voice. ES-56 is the domaine's statement bottling, named for the geological epoch that shaped its vineyards: Eocène Silex, flint-rich soils deposited 56 million years ago. These old vines grow on steep, flinty slopes near Saint-Satur at the appellation's eastern edge, plots once tended by monks and historically known as Les Bourgeoises, the name that graced this cuvée for years before the current geologic designation took over. What sets ES-56 apart is the cellar work. Unlike most village-level Sancerre, which sees stainless steel from start to finish, this wine is split after cold settling: part ferments in temperature-controlled tanks, part in French oak barrels sourced from the Tronçais forest. After fermentation, the wine rests on its fine lees for seven to eight months in oak, with regular hand-stirring to build texture and weight. It's a more labor-intensive approach, closer to how you'd treat a serious white Burgundy, and the payoff is real depth without losing the snap and drive Sancerre is known for. The nose opens with gunflint, dried lemon, and a touch of blossom, layered with subtle oak and mild spice. On the palate, it shifts into fleshy persimmon, yellow plum, and verbena, all lifted by tangy acidity and a salty, mineral current that runs from mid-palate to a long, saline finish. Full-bodied but never heavy, it's got the concentration and structure to stand up to more than just shellfish — think roasted chicken with herbs, creamy risotto, or grilled fish with beurre blanc. It's also one of the few Sauvignons that can genuinely benefit from a few years in the cellar, though it's generous and balanced enough to drink now. This is Sancerre with real substance, proof that the appellation can deliver more than just bright, easy-drinking whites.
