Chungcheongnam, South Korea Barley has deep roots in Korean history. During times of hardship, when rice was strictly rationed, rural communities survived on barley through the lean winter months leading up to the summer harvest. Koreans called this stretch bori gogae, the "barley pass," and the grain carried the weight of that memory for generations. As the economy grew, barley faded from significance, and surpluses began to accumulate. Hwanggeum Bori saw something worth rescuing. Founded in 2004, the producer set out to rehabilitate barley's reputation, sourcing sustainably grown heirloom golden barley from local farmers and crafting it into a premium single-grain soju. The result is a spirit that manages both complexity and restraint: excellent body and a smooth, rounded texture, with stone fruit on the nose and subtle grain notes running underneath. At 34 proof, it sits at the more spirited end of the soju range, offering enough backbone for cocktails while remaining clean and composed on its own. Serve chilled, straight or on the rocks.
