Melate Coyote- Gregorio Hernandez Lopez
$65.00
375mL The rare and revered Coyote is recently taxinomically described as Agave Lyobaa, but producers believe it to be a cross between Tobala (potatorum and seemaniana) and Madrecuishe (Karwinskii). It is impossible to know if your Madrecuishe seeds will produce Coyote and therefore, the varietal cannot readily be cultivated. These plants were collected in the wild at around 10-13 years of age. The resulting spirit is bright and zesty with a deep mineral character and a fruit drinkable palate. A truly rare and unique offering. Distilled by Gergorio Hernandez Lopez City of Origin: La Compania, Ejutla Agave Maturity: 13 years Time in earth oven: 3 days Grinder Method: Mill Fermentation Vat Type: Wood Fermentation Duration: 3 days Water Source: Spring water Still Type: Copper Refrescadera Number of Distillations: 1 Liters Produced: 100L (November 2021)
