Ohishi Whisky Sherry Cask is a Japanese rice whisky aged in ex-sherry casks at a distillery built on the banks of the Kuma River, one of the three fastest-flowing rivers in Japan and a water source prized for exceptional purity. Unlike grain whiskies distilled from barley or corn, Ohishi uses a blend of gohyakumanishi rice—thirty percent of which is grown organically in the distillery's own fields in Ubuyamamura using traditional koi-carp cultivation to control weeds—and mochi rice from Kumamoto Prefecture. The result is a high-toned, angular whisky with bright acidity and gentle heat, finishing with notes of maple syrup and stone fruit, a profile more delicate than the malt-forward character of Scotch or bourbon and reflective of the clean minerality of Kuma River water. Ohishi Distillery sits closest to the Kuma's headwaters in Kumamoto Prefecture, where the combination of fertile volcanic soil, underground spring water, and the region's humid subtropical climate creates ideal conditions for rice farming and barrel aging. The distillery operates with a dual commitment to tradition and innovation, maintaining time-honored production methods while experimenting with cask finishes uncommon in the Japanese whisky category. After distillation, the spirit is transferred into a library of approximately twelve hundred sherry and brandy casks, where it undergoes extended maturation—Ohishi prioritizes patience over volume, allowing each expression to develop layered complexity over years rather than months. The sherry-cask program imparts subtle fruit and oxidative notes without overwhelming the delicate rice base, a balancing act that distinguishes Ohishi from heavier, wood-driven aged spirits. On the palate, expect a lighter body than malt whisky, with pronounced acidity that lifts flavors of dried apricot, almond, and caramelized sugar, followed by a warm finish tinged with maple and a whisper of tannin from the European oak. The brightness makes it versatile at the table—pair it with aged Manchego, duck breast with cherry gastrique, or dark chocolate with sea salt, where the whisky's fruit-forward character and gentle spice complement rather than compete.
