Baltazar Cruz works with Sierra Negra, one of the rarest and most time-intensive agaves a mezcalero can source. This subspecies of Americana takes upward of twenty years to mature in the high-altitude forests of Oaxaca's Sierra Sur, developing massive piñas that can weigh over two hundred pounds. Cruz roasts them in traditional earthen pits, ferments with wild yeasts in wooden tinas, and distills in small copper pot stills—methods that preserve the agave's profound mineral character while adding layers of smoke and earth. The Palenqueros project connects Chicago drinkers with individual mezcaleros working outside industrial production, bottling single-producer batches that showcase personal style and regional terroir. Cruz's Sierra Negra comes from the community of San Luis Amatlán, where altitude and microclimate produce agaves with more vegetal complexity than their lowland cousins. At 51% ABV, this mezcal has the heft to carry its flavors without heat overwhelming the palate. Expect dense, almost resinous smoke on the nose, followed by wet stone, dark chocolate, and a green herbal note somewhere between sage and eucalyptus. The palate is earthy and substantial, with flavors that unfold slowly—roasted root vegetables, black pepper, a hint of mint, and that persistent minerality that marks high-elevation agave. The finish lingers with campfire ash and a whisper of citrus peel. This isn't a margarita mezcal. Sip it neat or with a single large ice cube to open up the aromatics.
