Unlike fully sparkling metodo Charmat Prosecco, frizzante undergoes a gentler secondary fermentation that yields a softer, more delicate perlage — the fine bubbles that give this wine its refreshing lift without aggressive carbonation. Perlage sources Glera grapes from hillside vineyards in the Prosecco DOC zone, where cooler nights preserve the fruit's natural acidity and aromatic freshness. The Perlage estate has been producing sparkling wine in the Veneto since the early twentieth century, working with Glera vines planted on the region's characteristic calcareous clay soils. The grapes are harvested by hand, gently pressed, and fermented in temperature-controlled stainless steel tanks to preserve the bright fruit aromatics that define the style. The secondary fermentation that creates the wine's effervescence happens under lower pressure than traditional Prosecco spumante, resulting in the softer, more ephemeral bubble structure that marks frizzante wines. The winery bottles without filtration to retain the wine's textural weight and aromatic complexity.
