A collaboration between Dad's Hat distillery in Bristol, Pennsylvania and New York importer PM Spirits, this is a Pennsylvania straight rye whiskey finished in a genuine Oloroso sherry cask sourced by PM Spirits through their connection with sherry authority Eduardo Ojeda. Six years old in new charred American oak, the rye then spent eight months resting in the Oloroso cask before bottling at full cask strength of 61%. Dad's Hat is built on a traditional pre-Prohibition Monongahela-style mashbill of 80% rye, 15% barley malt, and 5% rye malt, with no corn whatsoever. The result is a rye whiskey with real backbone rather than the bourbon-leaning sweetness of many modern expressions. The Oloroso finishing adds a lush counterpoint to the rye's natural assertiveness. Dried figs, dark fruit, and walnut from the sherry cask weave through the grain-driven spice, black pepper, and herbal rye character. The palate is concentrated and layered, with caramel, baking spice, and a savory, nutty depth that speaks to the quality of the original wine that seasoned the cask. The finish is long and warming, with the rye's sharp tannins and the Oloroso's richness in excellent balance.
