The juice is extracted using a tahona — a centuries-old volcanic-stone wheel that crushes roasted piñas without shredding fiber — then naturally fermented in open wooden tanks for fifteen days with a proprietary house yeast. The spirit is bottled at joven strength in a handmade ceramic decanter, which the producer notes allows the mezcal to evolve in the bottle, homogenizing volatile compounds and smoothing the tasting profile over time. The cork itself is reclaimed and cured from the producer's barrel program, a zero-waste detail rarely seen in the category. Puntagave operates in Yautepec, a village in the central valleys of Oaxaca where limestone-rich soils and high-altitude sunlight concentrate sugars in espadín agave over eight to ten years of maturity. The three-day earth-pit roast develops the agave's characteristic smoke without overpowering the vegetal sweetness, and the tahona method yields a thicker, more textured distillate than roller-mill extraction. Fifteen days of open-air fermentation in wood encourages wild ambient yeasts to layer complexity into the base, while the proprietary culture adds consistency batch to batch.
