Melrose Park, IL Skeptic Distillery was founded by Karl Loepke, a homebrewer and craft beer enthusiast who spent years in the specialty cleaning solvent industry before making an unlikely connection: the cold vacuum distillation technology used in industrial applications could, in theory, produce an entirely different kind of spirit. Traditional distillation relies on high heat to vaporize ethanol, which efficiently purifies the liquid but also destroys the delicate aromatic compounds that make a base ingredient interesting. In a vacuum environment, ethanol vaporizes at around 50 to 70 degrees Fahrenheit, allowing those subtle fruity, floral, and grain-forward flavors to survive the process intact. Skeptic built their own proprietary continuous-column vacuum still with precision copper column packing to maximize purification, then ran the resulting spirit through a multi-pass carbon filtration system using an in-house blend of ultrapure carbon. No additives of any kind. The base is 100% Midwestern corn, and it shows in the best possible way. The nose is clean and fresh with a clear corn origin, leading into almond and vanilla. The palate is silky and round with a gentle natural sweetness, building toward a peak of toasted almond and cream before the finish arrives with white pepper, a whisper of anise, and lingering grilled corn. It is approachable enough to sip neat but structured enough to anchor a cocktail without disappearing into the mix. At 80 proof and available in a one-liter format, this is a smart bottle to have behind the bar or on the shelf.
