Fattoria del Buonamico has been making wine in Montecarlo di Lucca since the 1960s, in a corner of Tuscany better known for structured reds and golden Vin Santo than for bubbles — which is exactly what makes the Particolare Brut worth seeking out. This is a traditional method sparkling wine, built from a blend anchored in Pinot Nero and Pinot Bianco, grapes that have quietly thrived in Montecarlo's hillside vineyards for generations thanks to cool Apennine air moving through the valley. The estate applies the same patience to this bottle that it brings to its still wines, with extended time on the lees giving the wine real textural depth rather than just fizz for the sake of it. In the glass expect a fine, persistent bead and a pale straw color. The nose leans toward citrus pith and green apple with a baked-bread, almond-skin note from lees aging, and the palate carries that same tension between bright acidity and a softer, creamy mid-palate. It finishes dry and clean, with none of the sweetness that can creep into lesser Italian sparklers labeled "brut" in name only. This is a sparkling wine built for the table, not just the toast. Pour it alongside fried seafood, a plate of prosciutto and melon, or a simple risotto with lemon and parmesan — the acidity and lees-driven richness hold up to food in a way that a lot of Prosecco doesn't. It also works well as an aperitivo on its own, especially if you're looking to put something in front of guests that doesn't
