Wilde Irish Gin comes from Rademon Estate Distillery in County Down, Northern Ireland, a family-run operation that draws its name from Oscar Wilde's mother, Jane, who once lived on the estate. Distiller David Boyd-Armstrong built this gin around a botanical he could grow himself: elderflower, cultivated right there on the grounds, which gives the spirit a floral backbone you don't typically find in London Dry-style gins. The rest of the botanical bill leans on classic juniper alongside citrus peel and other garden-grown ingredients, distilled in small batches in a copper pot still. What you get in the glass is a gin that's softer and more perfumed than the piney, juniper-forward bottles that dominate the category. Expect juniper up front, but it quickly gives way to honeyed elderflower and a light citrus lift, with a smooth, slightly sweet finish that makes this an easy sipping gin as much as a mixing one. It's less austere than a typical London Dry, which makes it forgiving for drinkers who find traditional gin too bracing. Because the elderflower note is doing real work here, this is a gin that wants a simple gin and tonic with a wedge of lime or cucumber rather than something that will bury it in big botanicals. It also holds its own in a French 75 or a gin fizz, where its floral sweetness plays nicely against bubbles and lemon. On the food side, pour it alongside goat cheese, smoked salmon, or a plate of charcuterie with fruit preserves — the elderflower has enough sweetness to stand up to salty and fatty bites without getting lost. If you've worked your way through the usual juniper bombs and want something with a genuine point of difference, this is worth picking up. We keep it in stock at Off Premise for exactly that reason — it's a gin people remember after the first pour, not just another bottle on the shelf.
