Milk & Honey Distillery

Israel's first whisky distillery — fast-aging in a Mediterranean climate.

Milk & Honey Distillery

Why we carry them

Milk & Honey Distillery is the first whisky distillery in Israel — founded in Tel Aviv in 2014 with whisky pioneer Dr. Jim Swan as a founding consultant (he also helped launch Kavalan and Penderyn). The Tel Aviv climate accelerates barrel maturation dramatically: a 4-5 year M&H reaches the wood-spirit balance of a far older Scotch. That makes every bottling distinctive, and slightly unpredictable in the best way.

The expressions we carry

  • Classic Single Malt — the foundational bottle. Gentle vanilla and floral nose; light body with vanilla, caramel, honey, and a touch of black pepper. Short delicate finish.
  • Elements · Red Wine Cask — finished in red wine casks. Red dried fruits, ginger, oak, coconut on the nose; light-bodied palate of wine flavors with subtle oak and vanilla.

A young distillery worth following

M&H is one of those rare distilleries where the early releases will be looked back on as collectors' bottlings in a decade. They're still iterating quickly — the Elements series is the experimental wing, and limited single-cask releases drop a few times a year. If you like Kavalan or Penderyn — both built on the same Jim Swan playbook — M&H is the next stop.
