Milk & Honey Distillery was founded in Tel Aviv in 2013 by a group of whisky enthusiasts who saw opportunity in Israel's warm, dry coastal climate—the same heat that forces wine grapes to ripen early also drives rapid angel's share loss and accelerated oak interaction in whisky casks. The distillery uses malted barley, copper pot stills, and ex-bourbon barrels as its foundation, then explores finishing regimes in wine casks sourced from European and Israeli wineries. The Elements series was designed to teach drinkers how cask type affects flavor, isolating each finishing wood so the wine's tannin, acidity, and residual sugar all leave fingerprints on the malt. Red wine casks contribute dried fruit, gentle spice, and a floral lift that softens the spirit's grain character, and the Tel Aviv heat ensures those notes develop in months rather than years.
