Smoky Scot

Smoky Scot is a five-year-old single malt distilled at Caol Ila Distillery on the eastern shore of Islay and bottled by Aceo Spirits under the Murray McDavid label. Matured in ex-bourbon oak casks and presented at 46% ABV without chill filtration or added color, it's a youthful, heavily peated expression that delivers the full maritime intensity Islay is known for. The bottle captures the distillery's signature phenolic profile at a moment when smoke, sea air, and malt still wrestle for dominance — unapologetically bold and structured for drinkers who want coastal Scotland in a glass. Caol Ila has operated continuously since 1846 on a slate-gray shoreline facing the Sound of Islay, drawing water from Loch Nam Ban and running its stills with soft heat to preserve the island's trademark peat reek. The distillery's spirit is driven by heavily peated barley — around 35 PPM — sourced from Port Ellen Maltings, then distilled slowly through copper pot stills to retain both phenolic punch and a subtle malty sweetness. Aceo Spirits, the independent bottling arm founded by Gordon Wright and Mark Reynier, selects casks that foreground distillery character over wood influence, and this five-year maturation in ex-bourbon oak does exactly that — the cask tempers the smoke without obscuring it. The nose opens with maritime smoke, iodine, seaweed, tar, brine, and old wood, the initial intensity gradually softening into floral and malty undertones. On the palate, bold smoke and peat lead with characteristic Islay bitterness, then give way to fruity and sweet notes — roasted sunflower seeds, generous malt, and a whisper of sea salt. The finish is long and smoky with a touch of menthol, lingering maltiness, and a faint sweetness. Pour it neat to appreciate the distillery's architecture, or pair it with oysters, smoked mackerel, or aged cheddar — anything that can meet the smoke head-on. It also anchors a Penicillin or Rob Roy with more character than most mixers can handle.
