2018 Domaine Nicolas Rossignol Bourgogne Pinot Noir
$48.00
Domaine Nicolas Rossignol's 2018 Bourgogne Pinot Noir comes from a producer working at the intersection of tradition and biodynamic-inspired farming in Burgundy's Côte d'Or. Nicolas Rossignol sorts fruit by hand, farms without synthetic herbicides, and times vineyard work and cellar operations to the lunar calendar — methods that translate terroir cleanly into the glass. This is entry-level Burgundy Pinot Noir with a pedigree that reflects serious attention to vine health and varietal expression. The estate manages its parcels through reasoned viticulture, plowing lightly to maintain soil structure rather than spraying. Rossignol's approach draws from biodynamic principles without certification dogma, focusing instead on what the vines need in each growing season. The 2018 vintage saw a warm summer across Burgundy, yielding ripe fruit with good concentration. Fermentation follows traditional Burgundian methods, with elevage designed to preserve the red-fruit character and fine tannin structure native to well-farmed Pinot Noir from this part of France. The result is a wine that honors both the varietal and the region's centuries-old winemaking tradition. The 2018 vintage shows a ruby color and opens with aromas of ripe cherry, violet, and subtle spice. On the palate, red berry fruit meets silky tannins and a long, balanced finish that reflects careful sorting and gentle handling in the cellar. This is a wine for roasted chicken, duck confit, or a charcuterie board with aged comté and walnut bread. It drinks well now and will hold for another three to five years if you want to see how it evolves with a bit of bottle age.
