The 2021 Molana Rasheh is a Syrah with a backstory most bottles can't touch: it's made by an Iranian winemaker working in exile, using fruit from Lebanon's Bekaa Valley to honor viticultural traditions that predate Islam by centuries. Producer Jamal Rayyani sources high-elevation Syrah from the same limestone soils that have grown vines since Phoenician times, ferments with native yeasts, then ages the wine between French oak barrels and clay qvevri in France. The qvevri aren't a gimmick. They're a direct nod to the buried amphora methods used across ancient Persia and Mesopotamia, techniques that survived in pockets of the Caucasus but were largely abandoned in Iran after the 1979 revolution made commercial winemaking illegal. What you get in the glass from the 2021 vintage is cool-climate Syrah that skews savory rather than fruited. Think blackberry and cracked black pepper up front, but the mid-palate moves toward cured meat, dried thyme, and something almost olive-like in its briny depth. The qvevri aging adds grip and a faintly rustic texture without turning the wine heavy or extracted. There's enough structure and acidity here to handle fatty cuts and slow-cooked dishes, the kind of tannin that wants food rather than fighting it. The 2021 shows solid dark fruit concentration balanced by that mineral backbone you'd expect from Bekaa's rocky vineyards and extended skin contact during fermentation. This is a natural pairing for lamb in any form, especially if there's sumac, yogurt, or charcoal involved. It holds up to Chicago's slate of serious Middle Eastern spots, the ones doing whole roasted cauliflower, grilled halloumi, or lamb shoulder with pomegranate molasses. Molana means "our master" in Farsi, a title Rayyani uses to acknowledge the lineage he can't access directly. The wine doesn't lean on that story to cover up rough edges. It's a well-made Syrah that just happens to carry the weight of displacement and memory. Decant it for thirty minutes and pour it alongside anything with smoke, char, or a little regional pride.
