Baron plants on pure basalt rock with almost no topsoil and farms without irrigation, pushing the vines into deep-rooted stress that produces wines of uncommon tension and minerality. The result is a Tempranillo that reads more like northern Rhône Syrah in structure than anything from Rioja, with the stony grip and umami depth that define every Cayuse bottling. The 2022 vintage showcases the varietal's adaptability to Walla Walla's hot days and cold nights, with the estate's geology translating directly into the wine's taut, rocky texture. Christophe Baron, a Champagne native, founded Cayuse in 1997 after walking the basalt-strewn fields that now anchor the estate, convinced that Walla Walla's cobblestone benches could rival Châteauneuf-du-Pape for intensity and longevity. He farms roughly 60 acres across multiple single vineyards, all certified biodynamic, treating the land with a reverence that borders on obsessive—native yeasts, small open-top fermentation tanks, minimal intervention at every stage. The Impulsivo bottling, introduced in the early 2000s, is aged in French oak with a focus on neutral barrels to preserve the fruit and mineral clarity that Baron prizes above all.
