Domaine Michel Gay et Fils was established in 1992 when Michel Gay and his brother François divided the century-old family estate, with Michel taking holdings across Chorey-lès-Beaune, Savigny-lès-Beaune, Beaune, Aloxe-Corton, and Corton. The domaine is now in the hands of the fifth generation, with brothers Sébastien and Laurent Gay overseeing both the vineyards and cellar. Sébastien's first act on returning from his winemaking studies in Beaune in 2000 was to eliminate herbicides and move the estate toward an organic and biodynamic approach, though without seeking formal certification, preferring flexibility in difficult vintages over the constraints of the label. Vines across the domaine average over 40 years of age, and the wines are fermented in concrete or stainless steel before being transferred by gravity to barrel for 14 to 18 months of ageing, with new oak kept to a modest proportion to preserve the purity and character of each site. Aux Serpentières is one of Savigny-lès-Beaune's most respected Premier Cru vineyards, a south-facing climat of marl and limestone soils lying just east of the village. Wine writer Clive Coates MW described the cluster of sites to which Serpentières belongs as producing Savignys of style rather than raw substance, and the reputation is well-earned: the vineyard reliably yields wines of elegance, aromatic lift, and genuine Côte de Beaune finesse. The 2019 vintage in Burgundy was outstanding, producing wines of superb balance between richness and structure. This Premier Cru reflects all of that generosity while retaining the freshness and definition that distinguishes Serpentières. The nose opens with inviting aromas of red cherry, wild strawberry, and violet, accented by earthy undergrowth and delicate spice. On the palate it is medium-bodied with fine-grained tannins, vibrant acidity, and layers of raspberry, cranberry, and savoury minerality that carry through to a silky, lingering finish. Approachable now, it has the structure and depth to develop further over the coming decade.
