Tomeu Llabrés trained as an oenologist in Tarragona, apprenticed under Alvaro Palacios in Priorat, then came home to Mallorca and founded Ca'n Verdura in 2012 in a former auto garage in the ancient village of Binissalem. He calls his approach "viticultura en miniatura," and he means it: every bottle is handmade, every vineyard personally tended, every decision driven by a singular obsession with the island's ancient indigenous variety, Mantonegro. Supernova Negre is the flagship and the thesis statement. One hundred percent Mantonegro sourced from old-vine, goblet-trained vineyards planted in the 1950s across the best plots in and around Binissalem and Santa Maria del Camí, including the Cas Pastor, Sa Bassa Blanca, and Plà de Buc parcels. The vines grow at around 130 meters in cal vermell, the distinctive red iron-rich clay and limestone soils studded with small and medium galets that define this corner of Mallorca. Manual harvest in small boxes, native yeast fermentation in stainless steel and large used French foudres, maceration varying by parcel, and 13 months of aging in 500-liter French oak barrels. No additions, no corrections, minimal sulfur at bottling. Around 7,500 bottles produced per vintage. The wine itself is immediately disarming: fragrant and medium-bodied in the way that makes you think of Nerello Mascalese or cool-climate Pinot, not the dense, extracted reds the Mediterranean is often known for. Wild red berries, tart cherry, cranberry, pomegranate, fresh herbs, exotic spice, and a whisper of forest floor, all framed by firm but velvety tannins and the kind of calcareous minerality that reminds you exactly where it comes from. A serious wine with genuine elegance, and one of the most compelling arguments for Mallorca as a fine wine region in its own right.
