Cinco Sentidos Cuishe Tio Tello is distilled by Eleuterio "Tío Tello" Pérez Ramos, a master mezcalero with over fifty years of production experience in Miahuatlán de Porfirio Díaz, Oaxaca. This mezcal joven is made from wild Agave cuishe, a variant of Agave karwinskii that grows slowly in the high desert and yields dense, mineral-driven spirit. The traditional process and single-palenque origin place it squarely in the artisanal mezcal category, and in Chicago's Lincoln Park bottle shop landscape, it represents the kind of small-batch, uncertified agave spirit that showcases what mezcal was before industrial scaling. Tío Tello roasts mature cuishe hearts in an underground conical earthen oven, then hand-mashes the cooked agave with wooden hammers—a tahona-style approach rare in the Miahuatlán district where mechanical mills are the norm. Fermentation takes place in cypress wood vats fed by well water, a method that introduces subtle tannin and oxygenation before distillation. The spirit is double-distilled in small copper alembic stills and typically bottled around forty-five percent ABV, though batch variation is common; early releases like batch TELCU-21 from September 2021 and a California-only lot from March 2007 have ranged from 45.1 to forty-eight percent. Cinco Sentidos works as both brand and documentation project, releasing single-village, single-mezcalero expressions that honor the palenquero's name and process without CRM certification. The nose opens with stone fruit, red apple skin, and lavender, layered over wet clay and mineral notes that reflect the karwinskii family's terroir. On the palate, expect a round mouthfeel with bright tropical fruit, herbal undertones, and a sweet-spice finish that lingers without heat. This is a mezcal for sipping neat, ideally alongside citrus-forward ceviche, grilled lamb, or aged cheeses that can stand up to the spirit's minerality and fruit intensity.
