This batch of Azul (a. Tequilana Weber) was distilled by maestro mezcalero couple Atelo Ramirez and Laura Arriaga in the town of Reyes Metzontla, Puebla. On a road-trip to Laura's native state of Morelos, the couple noticed fields of agave Azul and decided to stop and inquire. They ended up purchasing a truck's worth of the cultivated agave to make this spirit. The agaves were roasted in an underground conical pit oven for five days using mesquite as firewood and pirúl leaves to insulate the oven. After cooking, Atelo hand-mashed the agave with a wooden mallet, dry-fermented the mash for four days, and then allowed it to ferment with spring water for an additional six days. Laura and Atelo then distilled the fermented mash once in a hybrid still made of galvanized steel, clay, and copper and allowed the común (low wine) to rest for two months before a second distillation in July 2023. Blended with heads, hearts and tails by Atelo. Bottled June 2024. 304 liters produced.
