Salvadores Mezcal Ensamble Barril - Tobala blends two of Oaxaca's most prized wild agaves in a single expression. Barril, a semi-wild subspecies of Karwinskii that can take up to eighteen years to mature, brings structure and minerality, while Tobalá—cultivated only in high-altitude forests and often called the king of mezcals—contributes floral complexity and tropical fruit intensity. The result is a small-batch ensamble that demonstrates what happens when rare agaves meet traditional pit-roasting and the producer's commitment to village-level terroir in the central valleys of Oaxaca. Salvadores Mezcal sources agaves from family parcels across Oaxaca's mezcal belt, working with maestros mezcaleros who use earthen-pit roasting to develop the smoky, mineral-driven backbone that defines the house style. After roasting underground with mesquite and ocote, the piñas are crushed with a tahona—a centuries-old stone wheel pulled by horse or mule—before fermenting in open wooden vats with wild airborne yeasts. This method pulls terroir directly into the liquid: the pit imparts earth and ash, the tahona releases oils and fiber, and wild fermentation amplifies the agaves' native character. The distillation occurs in small copper pot stills, and nothing is added post-distillation—no water adjustment, no coloring, no shortcuts. On the palate, this ensamble opens with roasted earth and stone fruit, layering in guava, white pepper, and a smokiness that reads more like campfire ash than barbecue char. The Barril contributes weight and a saline minerality that anchors the mid-palate, while the Tobalá lifts the finish with floral notes and citrus peel.
