Cinco Sentidos La colección Mixteca Edition 4--Pizorra is a single-village mezcal distilled from wild-harvested agave Pizorra (Agave marmorata) by maestro mezcalero Delfino Tobón Mejía in San Pablo Ameyaltepec, Puebla. This limited edition captures a rare expression from outside Oaxaca's mezcal heartland, distilled in September 2022 and bottled in August 2024 after nearly two years of rest. The massive white-striped agaves were foraged from the outskirts of a village whose Nahuatl name translates to "the mountain where water is born," and the mezcal reflects that high-altitude terroir in its mineral-driven profile. Delfino Tobón Mejía worked alongside friends and family to harvest the wild Pizorra agaves, roasting them with tlahuicole firewood in an underground conical pit oven for four days before milling the cooked piñas with a mechanical shredder. Fermentation occurred naturally with spring water for approximately one week, allowing native yeasts to express the agave's character without intervention. Delfino then distilled the fermented mash and tepache once in a custom-made hybrid three-plated copper still, proofing the final spirit with a blend of heads, hearts, and holanda to achieve balance. Cinco Sentidos operates across multiple mezcal-producing regions in Oaxaca and Puebla, partnering with individual maestros to document single-palenque expressions that might otherwise never reach a wider audience. Expect a mineral-forward mezcal with the herbaceous, vegetal intensity characteristic of wild marmorata agaves, layered with the smoke from the underground roast and subtle citrus notes from the copper distillation. The spirit's heft and complexity make it a contemplative sipper, best appreciated neat in a veladora or copita to catch the evolving aromatics. Pair it with grilled lamb, tlayudas topped with Oaxacan quesillo, or dark chocolate to complement the earthy, smoky finish. This is a mezcal that rewards slow drinking and benefits from a few drops of water to open up the more delicate floral notes hidden beneath the smoke.
