The name itself reflects the estate's holistic philosophy: bees as vital pollinators, biodiversity as a guiding principle, and a commitment to sustainable, organic viticulture (CCOF certified) throughout. Néctar de Campo, meaning "nectar of the fields," lives up to its name as a true field blend: Grenache, Nero d'Avola, Cinsault, Carignan and Zinfandel, all harvested on the same day and co-fermented together in a single vessel, a method that captures the vineyard's character as a unified whole rather than a stitched-together assembly. Fermentation is spontaneous, relying on native yeasts from the estate's organic vineyard, with extended skin contact, no corrections, no fining and no filtration. The result is a wine that feels genuinely alive in the glass. The nose offers fresh red berries and wildflowers, with a touch of smoky spice and herbal lift that gives the wine its distinctive Baja edge.
