This first lot clocks in at 42% ABV, chosen specifically to preserve the savory, mineral-driven profile that defines this remote mountain distillery's approach. Mascota sits in Jalisco's Sierra Occidental, a less-trafficked pocket of highlands where cooler temperatures and eutric regosol soils lend the region's Blue Weber agave a different personality than what you'd find in the valley or the more famous Los Altos highlands. The distillery itself is built around a closed-loop philosophy: spent bagazo — the fibrous agave pulp left after pressing — gets recycled to fire the steam ovens and heat the pot stills, then repurposed again into cork stoppers and label paper. Even the tahona wheel that crushes the cooked piñas runs on solar power, and the bottles are pressed from recycled glass. The production is traditional otherwise: masonry oven cooking, tahona crushing, fermentation in FDA-approved plastic tanks, then a two-step distillation starting in stainless steel and finishing in copper pot stills. The result lands somewhere between earthy and herbal, with roasted agave at the center, surrounded by sage, mint, light wood smoke, and black pepper. There's a savory minerality underneath — almost vegetal — with subtle anisette and a crisp, clean finish that doesn't overstay.
