Galáctica is a winemaking collaboration between two Chilean talents, Daniela Salinas and Ricardo Baettig, working with Brooklyn-based Brazos Wine Imports to showcase what Sauvignon Blanc can actually do in Chile's interior valleys when you give it some altitude and attention. This is a project built on relationships and thoughtful sourcing rather than volume, and it shows in the glass. The fruit comes entirely from two sustainably farmed sites in the Maule Valley, a region better known for old-vine País and Carignan than Sauvignon Blanc. About 80% is from Yerbas Buenas, planted in the cool Andean foothills where diurnal shifts run wide and the fruit holds onto its acidity and aromatics, even in a warm growing season. The remaining 20% comes from Los Alamos in Curicó, picked from alluvial soils with sandy loam and clay pockets at around 1,650 feet. Those Pacific breezes that roll through the valley help preserve freshness and tension, keeping this far from the flabby, over-ripe style Chile sometimes gets tagged with. In the cellar, Salinas and Baettig keep things straightforward: whole-cluster pressing, fermentation entirely in stainless steel, two months on the lees, then another four to six months of tank aging before bottling. No oak, no tricks, just clean winemaking designed to let the fruit speak. The wine itself is bright and aromatic, with lemon zest, gooseberry, and fresh mint on the nose, layered with floral notes of lavender, chamomile, and sweet pea. Some bottles lean into kiwi and lychee territory. The palate is light-bodied and crisp, with lively acidity and a subtle coastal salinity that carries through to a clean, mineral finish. This is a versatile, food-friendly white that's equally good with citrus-marinated shrimp, a simple goat cheese salad, or herb-forward vegetarian flatbread. It's also refreshing enough to drink on its own without needing an excuse. For anyone tired of New Zealand's grassier style or looking past entry-level Chilean Sauvignon, Galáctica offers a compelling middle ground at a fair price.
