The vineyards sit on galestro-rich soils near the Alpe di Poti, where steep day-to-night temperature swings during the growing season concentrate flavor and preserve acidity. The name Spigallo is a visual pun on the estate's historic family crest: a rooster pecking wheat, or in Italian, "gallo" and "spiga," which the Pancaro family adopted as the wine's identity when they relaunched the estate's image in 2011. Fattoria Il Muro has been in the Pancaro family's hands for two hundred years, dedicated to viticulture on hilly terrain that slopes gently toward the Castro stream valley. The proximity to the Alpe di Poti creates a microclimate with sharp diurnal shifts, and the galestro subsoil is the same fractured shale that defines much of the best Chianti country, promoting deep root systems and concentrated fruit. The environmental conditions here allow the family to farm with minimal intervention, relying on the natural health of the vineyard rather than synthetic inputs. Sangiovese thrives in these conditions, developing structure and perfume without losing freshness. The nose opens with red roses, black currant, and blueberry, classic markers of Sangiovese grown in cool hillside sites. On the palate the wine is fresh and fruity, with a tannic structure that feels substantial but never coarse—the tannins are lively and fine-grained, supported by bright acidity.
