Las Cartas Sauvignon Blanc
$18.00
Las Cartas Sauvignon Blanc, nicknamed "Love Letters," is estate-grown by Ventisquero in Chile's Casablanca Valley, a cool coastal region where Pacific fog and afternoon breezes preserve aromatic intensity in white varietals. The wine is 100% Sauvignon Blanc from sustainably farmed vineyards, and Ventisquero holds one of Chile's earliest "Sustainable Wine of Chile" certifications. The proximity to the ocean gives this bottle a freshness that separates it from warmer-climate Sauvignon Blanc. Ventisquero farms estate vineyards in the Casablanca Valley, where morning fog rolls in from the Pacific and burns off by midday, creating diurnal temperature swings that lock in acidity while allowing phenolic ripeness. The valley sits between the coastal range and the Andes, channeling ocean air inland and keeping summer temperatures moderate. This climatic balance is why Casablanca became Chile's flagship region for Sauvignon Blanc and Chardonnay in the 1990s, and Ventisquero's commitment to sustainable viticulture, certified long before it was fashionable, ensures the fruit reflects terroir rather than inputs. The nose shows pineapple, pear, lemon, guava, and grapefruit, the kind of tropical-citrus layering that only happens in cool climates where grapes ripen slowly. On the palate, the texture is surprisingly creamy for Sauvignon Blanc, balanced by vibrant acidity that keeps the wine crisp rather than heavy. Green apple, pear, and citrus fruit carry through to a medium-length finish with a touch of warmth. Pair it with ceviche, grilled white fish with chimichurri, goat cheese salads, or oysters on the half shell, anything that benefits from bright acidity and fruit weight without oak.
