Mas Peyre Maury La Rage du Soleil Hors d'Age is a Hors d'Âge Maury, a vin doux naturel from the Roussillon in southern France, fortified mid-fermentation to preserve the fruit and lock in the natural sugar. The term "Hors d'Âge" signals extended barrel aging beyond the standard classifications, resulting in a wine that balances oxidative complexity with the richness of Grenache grown on schist soils in the foothills of the Pyrenees. This is a style built for time, both in cask and in bottle. Mas Peyre is a small estate in the Agly Valley, where Grenache thrives in the high-altitude heat and the diurnal swings that define Roussillon's most serious sites. Maury sits at the northern edge of the appellation, where the soil is dominated by black schist that retains heat through the night and pushes the fruit toward concentration without losing acidity. The wine is fortified with neutral grape spirit during fermentation, then aged in barrel until the winemaker deems it ready — often years longer than the minimum required for the Hors d'Âge designation. The wine opens with cherry compote, spice cake, and cocoa powder, layered with tobacco leaf, bitter orange, and rose pepper. Lightly drying tannins balance the inherent richness, making this more than a simple dessert pour — it pairs well with blue cheese, dark chocolate, or roasted duck, and continues to evolve in the bottle after opening. Serve it slightly cool, around 55 degrees, to bring out the savory aromatics.
