Maxico Mistico Licor Del Sobador is a Mexican amaro that breaks from Italian fernet tradition in a crucial way: the herbal extractions are performed in water rather than alcohol, yielding softer aromatics and a rounder mouthfeel than spirits-based bitter liqueurs. The blend centers Mexican wormwood, mullein, mint, fennel, and propolis, sweetened with house-made caramel that gives the liquid its deep mahogany color. At 70 proof, it splits the difference between a sipper and a modifier, making it more versatile than most fernet-adjacent bottles available in Chicago. Maxico Mistico produces Licor del Sobador in small batches, aging the liqueur after blending to marry the water-extracted herbal oils with the caramel base. The water extraction method is uncommon in bitter liqueur production but common in traditional Mexican herbalism, where teas and tinctures historically rely on agua rather than aguardiente. The aging rounds out the wormwood's sharp edges and allows the fennel and mint to bloom without the astringency you'd get from alcohol maceration. The result is a darker, gentler take on the amaro family, with viscosity closer to a cordial than a distillate. The palate shows bittersweet caramel up front, followed by cooling mint and anise, then a long finish of herbal bitterness from the wormwood and mullein.
